Guess what Charu Singh did. She created a one-day ‘dhaba’ at home – Charu Da Dhaba!

Charu and I know each other for decades and when I saw her beautiful pictures of food on Facebook, I was moved to see the transformation from a young, bubbly girl to a loving, matured woman. I asked her if she could do a post for Womanatics and she readily agreed.
Here is what Charu has to say about the celebrations and her idea of the dhaba.
“My husband absolutely loves food. But because my father-in-law is diabetic, doctors hinted that my husband is also prone to disease. Since then we take care about his food habits. He keeps his eating habits under check and has lost 16 kgs in one year and has been maintaining that.
Last month we had two special occasions – our wedding anniversary and his birthday.
On our anniversary, we planned to dine out. We do not have many Indian eateries in this area of Texas. I am a vegetarian and that adds to our woes. We ordered a veg lasagna for myself and a non-veg version for my husband. The waiter there was surprised as he said he had never heard of lasagna without chicken and beef! Our overall experience was unsatisfactory. My husband was more disappointed than me as he really looks forward to eating good food.
That is when I decided to make his birthday special with good food.
Dining out was not an option anymore so I did what I could do best being at home – I made a one-day dhaba at home for my husband on his birthday!
I am a vegetarian and I do not cook non-veg at home so the best way to go forward was to create the menu around Veg-Thali. I googled the popular recipes of north Indian veg thali and then came up with my menu.

It took me two days to prepare the full menu on the d-day. I did all the preparation i.e. chopping, cutting etc a day in advance. I prepared kheer, chutneys (tamarind and coriander), palak paneer gravy a day before – the things that can be stored for few days.
Next day, I began the job at 6 am. My four burner gas stove and I were busy and working the whole day. Along side, I made a fruit cake for him.
It was a working day for him so when he left for office, I also did a small decor for the dining room. I decorated the dining room with tiny, little heart shaped cards that had my husband’s characteristics mentioned on them.

By evening, I had my plans ready for the show. He returned from office and saw the cards. He read the cards and felt flattered, I suppose He asked me if I wanted to go to an Indian restaurant. That is when I told him, ‘I have the restaurant at home today.’
I handed over the menu card to him. He was stunned. In his own words, he hadn’t expected this kind of luxury. He anyways relishes food cooked by me and when I told him that I cooked all this for him, he was amazed, pleasantly surprised and felt loved.
We sat at the dining table. Cut the cake and enjoyed the full meal with candles and soft music in the background.

His BIG, WIDE smile conveyed his joy. He appreciated me and I could see love and genuine compliments in his eyes.
I do not know if this holds true for everyone out there but I know in my husband’s case, the way to reach his heart is through his stomach. He loves my cooking and that day he loved it even more.
Surprisingly even after two days of work, I wasn’t tired of this celebration. I was still upbeat and exhilarated. His happiness was my source of energy. His genuine compliments were my greatest reward.
And you know the icing on the cake? My sons, who are otherwise fussy eaters, ate stomach full that day. So as a woman and a mom, I got double treat!”
